TYPICAL USES: Dipping cookies, fruit, cannolis, pastries, making chocolate decorations, ganache and chocolate fountains.
Handling Procedure: This product contains no hydrogenated fats so working with it is different from traditional coatings. Caution: Not following these procedures may casue this coating to bloom (turn gray and streaky).
- Melt DCOAT Natural slowly, keeping the heat source under 125°F.
- Stir frequently while melting and during the application process.
- If using a microwave: heat medium power in 1 minute intervals. Stir between intervals.
- Application temperature should be between 89°-92°F
- “Shock Cooling” in a refrigerator will acheive the best shine and the hardest structure.
- Store finished product under 68°F.
